If I could name one of the most heavenly food combinations, it would be ban mian and dumplings! Rain or shine, spicy springy noodles and silky smooth dumplings make for a hearty meal. And, there’s one stall that makes these with a special shrimp sauce in Telok Blangah Food Centre.

Started by John, an Ex-Hotel Executive Sous Chef, and Yanan, a lamian and dumpling chef from China, Yanan offers different types of ban mian noodles and dumplings to patrons.

John used to work in high-end hotels such as St.Regis and The Westin Singapore, but he left in March amidst the pandemic, bringing his wealth of knowledge in the kitchen with him to his new venture. Their menu currently has both soup and dry options for ban mian, with six different types of noodle to choose from! Besides dumplings, they also have gyoza with vinegar.

John and Yanan use only fresh pork in their handmade meatballs, and dumplings. Their seafood stock is simmered for seven to eight hours every day.

John said their unique selling point would be their shrimp chilli and shrimp sauce that’s made with dried shrimp. Their prices are a little on the higher side as the ingredients they use are higher in quality.

I went with John’s recommendation and got the Seafood Combo Premium Soya Sauce Toss Noodle ($5.50), which has prawns, fried fish slices, handmade meatballs, and ikan billis. I was amazed at how addictive the springy noodles were. The heat and umami in the shrimp sauce had me hooked and I really enjoyed the noodles.

The fresh prawns were sweet and crunchy, and the fried fish was coated in a thin batter. The fried dumplings with pork filling were delightful as well. YananBanMianNoodle-13

Next, I tried the Handmade Pork Meat Ball Brown Rice Beehoon Soup ($3.50). The meatball was juicy and flavourful, which went well with the brown rice bee hoon. John explained that they offer brown rice bee hoon as a healthier option, and it’s a good option for the elderly patrons who visit their stall. The seafood soup was light and refreshing.

Lastly, I had the Chive and Pork Dumplings (8pc) ($5) that were served with chilli. Each dumpling had a crispy exterior, and a juicy and tender chive and pork filling. I only wish that they were more generous with the amount of filling!

Overall, if you’re searching for a wholesome meal, Yanan Ban Mian Noodle 亚男扳面, 面粉粿 wouldn’t disappoint.
