Uncle Peter Hokkien Mee Reopens In Redhill

While the “Best Hokkien Mee” title is a very subjective one, depending on who you ask of course, you might hear “Uncle Peter Hokkien Mee” popping up as one of the contenders.
That is why loyal patrons of his stall were sad to hear that it was closing down. However, its fans would be happy to know that it is reopening in a new location in Redhill!
Uncle Peter, who runs the store, worked at Bedok Corner Hokkien Mee before he decided to start out on his own. He places an emphasis on the quality of the ingredients, believing it either makes or breaks a dish. Thus, he spends hours preparing them before opening his stall each day.
His Signature Prawn Hokkien Mee ($5.50/$6.50) has a distinct ‘wok hei’ which is the hallmark of a good plate of Hokkien Mee. Although his version is a drier one, each strand of noodle absorbs and retains the rich stock and flavour well.
The pork lard, which is one of my favourite parts of this dish, is exceptionally crisp and fragrant here. Uncle Peter shares with me that the secret is to fry them on low heat for 8-10 hours.
His house-made chilli is another showstopper. Not only is it flavourful and piquant, it elevates the plate of Hokkien Mee when mixed together. However, be warned, the chilli packs quite a punch and is definitely not for the fainthearted. I found myself perspiring just from a few bites of the noodles that had been mixed with the chilli.
Currently, Uncle Peter is still settling into his new store and is only serving his signature dish. With fans of his Hokkien Mee coming from all over Singapore, do be prepared to wait for over an hour!
