The restaurant is bustling every Sunday with the energy and atmosphere of a lively Mediterranean Market. Led by Executive Chef David Senia, the restaurant presents the best Mediterranean herbs, spices and olive oil and traditional recipes for brunch. We started our brunch with fresh seafood on the ice, cheese, mini burgers, soups etc..
Love the appetizers corner which has Eggplant Mediterranean Salad, Tomato Mozzarella Salad, Cous Cous Tabouleh, Potato Lobster Salad. There is also an array of charcuterie platter which makes us go crazy.
Every week brings new flavours and a seasonal menu which changes each week, highlights include an aromatic Seafood Bouillabaisse, Spanish Style Suckling Pig, leg of lamb and other barbecued meats, a selection of pasta prepared ala minute and more.
Special Kebab was grilled to perfection and very tender. The staffs will place the meat carefully in pita bread. I thought wraps does better because pita is too thick.
Foie Gras and Mediterranean Samosa has great crispy texture packed with alot of ingredients.
Instead Crispy Risotto is crunchy outside coupled with the soft onion confit and seafood which make them a delightful addition to any meal.
I think The Knolls has a wide array of desserts such as Mille Feuille, Chocolate Tart, White Forest Cake, Chocolate Praline, Macarons, Eclair, Bread and Butter Pudding, Macarons etc.
Not forgetting the tropical fruits. I had lots of rambutan.

The spectacular sea views are reminiscent of the ocean views from Barcelona. The Knolls gives me a chance to spend a wonderful time amid azure waters of the sea and bright tropical vegetation.
Those who would prefer to enjoy their Mediterranean meal in company of the soft sea breeze can sit at The Knolls’ alfresco dining space that overlooks Capella’s cascading swimming pools and the South China Sea.
Mediterranean Market at The Knolls is priced at S$148++, inclusive of a free-flow of boutique wines or S$168++ to include free flow of champagne, and is served every Sunday from 12:30pm to 2.30pm at The Knolls restaurant.
