Sunday Champagne Brunch at InterContinental Singapore

What makes a good Sunday brunch? For me, it’s the ambience, food, music and wine. The most ideal brunch is to have it under a tree, facing the sea with a cold weather. Aiya, I think like that must go to Paris because we will only get cold weather when it rains. Lolol.
InterContinental Singapore introduces “The Art of Sundays” Champagne Brunch at their iconic Lobby Lounge, which fits my bill perfectly. There are classic brunch favourites, including 7 live cooking stations of premium pan-seared 365 days grain-fed US beef, freshly shucked Fine de Claire, Tasmanian and Fanny Bay oysters, foie gras, eggs en cocotte with caviar or “your way”, gourmet mini burgers and “pot-steamed” Australian mussels in sauce à la Mirepoix, alongside appetisers, succulent seafood, gourmet charcuteries, 12-types of artisanal cheeses and chef’s signature main courses.
Enjoying delicious food on a high ceiling magnificent lobby, with delightful music accompaniment and an endless flow of champagne… totally end my weekend on a perfect note.
Masterfully crafted by Executive Chef Eric Neo, the menu are Asian-infused specialities including Chilli Crab Linguine, handcrafted dim sum from their signature Cantonese restaurant Man Fu Yuan. We started with some tapas such as Beef Cheek Rendang on Rice Cracker, Homemade Seafood Otah Otah, Braised Itek Sio in Mantou, which was inspired by InterContinental Singapore’s Peranakan heritage.
Then, we had some crustacean on Ice: Boston lobsters, Alaskan King Crab, Tiger Prawns, Mussels and Scallops. They serve three kinds of oysters: Fine de Claire, Tasmanian and Fanny Bay. As usual, the boyfriend went crazy over the fresh oysters.
Moving on, there is a whole range of Japanese items such as sashimi, sushi, chawanmushi and cha soba noodles with chilled dashi broth.
If you prefer to start your meal with salads, they have a DIY salad section.
But if you are as lazy as me, then you can pick from the appetizers. LOL. There is BBQ salmon with nicoise salad, king prawn salad, grilled asparagus with egg and parmesan, turkey salad, duck rillettes and boiled potato salad.
They have a good variety of charcuterie: Leg of Jamon Iberico de Bellota aged 30-36 months, San Daniele Ham, Chorizo, Wagyu Beef Pastrami, Duck Rillettes, Artisan Blood Sausage, Air-dried Salami, Air-dried Beef and Smoked Pancetta.
What I love most about this epicurean spread is, they have 7 live cooking stations! There is chilli crab linguine and lobster crab ravioli.
Sometimes, Chef Eric Neo will walk around to do the live stations. And whenever he is at that station, I will be queuing for my food there like a little fan girl. Haha! So at the eggs station, he prepares Eggs Benedict with Smoked Salmon and Hollandaise, Eggs En Cocotte with Caviar.
There is also Pan seared Foie Gras, Pan-Seared 365-days Grain-fed US Beef, Mini Burgers with Seafood or Kurobuta Pork.
Pot-steamed Australian Mussels in Sauce à la Mirepoix
Wah eat until here I already very full liao. They still have main courses Main Courses like prawn and scallop with spring vegetables and saffron nage, grilled cod fish with nicoise and lemon butter, grilled lamb T-bone with rosemary juice and ballantines chicken stuffed with ricotta and perigord juice.
The Cheese Board offers 12 different cheeses from France, Spain, England and New Zealand served with Crackers, Lavosh, Dried Fruits and Fruit Paste.
The impeccable dessert selection includes over 20 types including Signature Hazelnut Chocolate Crunch, Valrhona “Dulcey” Blonde Chocolate Tart, Floating Island on Sarawak Pineapple and Ginger Coulis, Panna Cotta with Basil and Mint, Assorted Nyonya Kueh Chocolate Fountain, Petit Fours Selection including Macarons and Ice-Cream Bar.
Complete your meal with Crepe Suzette prepared at your table. Paired with Irish coffee, it is a befitting way to end the gloriously decadent brunch experience.
Complementing the gastronomic delights are bespoke cocktails created by their dedicated mixologist according to your mood, in addition to free-flow Veuve Clicquot Brut Yellow Label Magnum Champagne, served for a limited period in Magnum bottles, and refreshing Pink Elephant Rosé.
The delicacies are accompanied with impressive live music on the piano. It was an unforgettable brunch experience at Intercontinental, all I wanted do is throw myself on the sofa and relax.
The “Art of Sundays” Champagne Brunch will be served at InterContinental Singapore’s Lobby Lounge every Sunday from 11.30 a.m. to 3 p.m.
