When I think of white bee hoon, I think about all that white gravy with eggy bites that lusciously coats each noodle strand, and of course the prawns, seafood, lard, sliced pork, and satisfying smokiness imbued within the dish. There’s one stall that does theirs with a strong mastery of the wok at Havelock Road Cooked Food Centre!
Opened by Bee Goh nine months ago, Soon Heng White Bee Hoon serves out plates of their popular white bee hoon and Hokkien mee in the morning and early afternoon.
Bee Goh shared that he used to be a chef for a catering company 20 years ago and learnt how to cook his dishes from a ‘shifu’. He was working in the transport industry before the pandemic saw him starting his own business.
There are only two items on the menu, each with three different sizes to choose from ($4/$6/$8). I decided to get both to try!
The White Bee Hoon ($4) comes with two large prawns, la la, and white bee hoon that’s topped with a mountain of fried lard cubes and a scoop of chilli on the side. Bee Goh excitedly explained how he sources his prawns at the market early every morning. His efforts definitely paid off as the plump prawns were fresh, crunchy and meaty! The dish also uses Japanese lala that pair great with the thick white gravy. I could taste a strong wok hei throughout, and the bee hoon was not too soggy. While the egg bits within the sauce could’ve been more abundant, the dish had ticked most boxes that define a good plate of white bee hoon.
Customers can also order Hokkien Mee ($4) which uses similar ingredients found in the white bee hoon, just with yellow noodles instead.
