Ocean Restaurant by Cat Cora – First Aquarium Dining Experience

Located inside the S.E.A. Aquarium, Ocean Restaurant is opened by world renowned female Iron Chef Cat Cora. It is her 7th restaurant and the 1st in Asia. I brought my aunt here for dinner to let her enjoy her first fine dining. It was quite difficult to reserve seats due to the small number of tables. By the time I booked, all the tables closest to the aquarium were booked and we were seated to the back. But it is okay, we were still able to enjoy a magnificent view of the Open Ocean habitat whilst enjoying our dinner.
Characterised by light, simple and healthy dishes using the freshest produce from around the region, we had one of their set dinners ($168 per pax) and tried some of Cat Cora’s signature dishes as well as dishes that have been specially created for Ocean Restaurant.
We started our dinner with a tasting of oysters – warmed oyster tartare with bean sprout and sago, oyster with chilled ham cream and smoked paprika, oyster with yuzu soy reduction and purple shiso ice.
I requested to change my oysters and was pleasantly surprised when they served me their signature 42 degree sous vide salmon with popping fish roes. The sous vide salmon has a silky texture and was delightfully refreshing.
Next, the pan fried duck liver with sous vide granny smith apple, lemon compote and apple gel works fairly well, where the robust flavour of the duck liver is well-paired with the refreshing smith apple.
We had the seasonal pan fried red gurnard with pesto and sea urchin emulsion. The fillet is skilfully prepared to achieve a crisp skin and firm flesh.
French yellow chicken roulade paired with fried escargot, roasted celerias and spinach is quite unique. Black garlic cream and chicken liver mousse add bursts of flavour.
To cleanse the palate, we had fresh fruit and berries with strawberry sorbet and espuma.
For chocolate fans, you will like Ocean’s chocolate passion with banana stew, 68% cocoa ice cream and passionfruit espuma.
Frankly speaking, food here wasn’t very memorable but dining with a view is definitely a winner. It’s good for families because the restaurant can accommodate children. However, we couldn’t really enjoy our dinner much that night because there were too many kids around us and some of them were screaming and crying.
Note that they don’t serve water here. You have to order a bottle of water or some other drinks.
