Mr Fish – One of the Best Fish Soup and Hor Fun in Chinatown That’s Worth The Wait

I am a huge fan of fish soup. One of my favourites is Mr Fish.

Allan, who used to work as an IT specialist, now runs the stall full-time with his mother. He grew up in Chinatown and really miss the street-side stalls along Terengganu Street where no milk is added into fish head bee hoon.

In fact, they used to run a zichar stall at Henderson Road. When they found a stall in Chinatown, they decided to just focus on doing Cantonese-style fish dishes. Hence, Mr Fish was born. Think Fish Soup, Black Bean Sliced Fish Hor Fun, Braised Bittergourd and Sliced Fish etc.

We waited for about half an hour on a Saturday afternoon for our dishes to arrive. When the Fish Head Bee Hoon ($5) finally arrived at my table, the aroma from the piping hot fish stock caught my attention immediately. The fish bones are boiled for hours to achieve that silky texture that the tasty soup possesses.

The process is time-consuming but they insist on not cutting corners – no milk is added. It takes just one sip of the soup to know that it’s worth the wait. It’s clean-tasting and savoury. The toman fish slices are lightly seared in the wok before cooking in the soup.

Besides the fish head bee hoon, the other bestseller is the Fried Fish Collar with Bitter Gourd. Allan says he took a few months to perfect his black bean sauce. I honestly love it! Cooked in a black bean sauce, the crunchy bitter gourd and fresh fish slices carried a distinct wok hei. The dish is really comforting and is best eaten with a bowl of white rice.

Another highlight for me is the Black bean Hor Fun with Sliced Fish. At Mr Fish, the noodles are only cooked upon order. You won’t see pre-seared noodles at a corner, waiting to drizzle on the sauce. But it also means that the waiting time can be longer during peak hours. But well, good food is worth the wait right?

If you can, tell them not to be too generous with the pepper and indulge in the savouriness from the black bean. The distinct wok hei taste of the hor fun, coupled with the robust gravy make each mouthful very satisfying.
