Ming Kee Chicken Rice at Bishan – Chilled Chicken For You?

For those of you who has been staying in Bishan, I am sure Ming Kee Chicken Rice is definitely not a stranger to you. Queuing for 30 mins and more is pretty normal here during meal times. During weekends, you probably want to buy a bun while queuing because you are likely to wait for at least an hour.
But, what’s so special about Ming Kee Chicken Rice?
The chicken, of course. For those who are there for the first time, you may think that the shop ran out of chicken because there was nothing being displayed. In actual fact, once the chicken is cooked, they will dunk it in ice water and it will be left there till it is ready to be chopped.
Shocking the meat in ice water after cooking creates a jelly under the skin. End result? The meat is flavourful, succulent and taste even better when you eat your chilled chicken with some steaming rice (honestly, I prefer it to be slightly more oily). As you can see, we ordered the whole chicken ($25) since we queued 45 minutes for it. I love it when the skin glides smoothly into my mouth.
Chicken gizzards are also soaked in cold water to retain some crunch. Nothing much to shout about their chilli sauce. Even though there was an abundance of garlic, I thought it was too watery for my liking.
