Tucked away in the bustling Marsiling Lane Market & Food Centre, Lai Xing Prawn Noodle 来興蝦面 has been very popular among locals for nearly 30 years. Despite its understated presence on social media, this humble stall consistently draws long queues, proving that good food needs no loud advertisement.
The prawn noodles here are really affordable. For just $3.50, a bowl brims with four prawns, fresh pork slices, fish cake, bean sprouts, and noodles, all soaked in a delicious broth crowned with crispy fried shallots and fragrant pork lard.
The soup, with its light tea-colored body, boasts a sweet-savoury taste profile that leans slightly on the sweet side. Infused with the essence of crustaceans, it has a touch of old-school Singaporean charm.
Customers can choose between the soup or dry version, though majority of diners opt for the soup version—a clear indication of its popularity.
For those seeking extra oomph, the stall provides house-made chili powder, fried shallots, and pork lard. While these condiments enhance the soup’s complexity, I prefer to enjoy the delicate flavours of the broth as it is.
Lai Xing opens at 7:30 AM, but you can see a line of customers queuing earlier to secure their spot. By 10:30 AM, the stall usually sells out.
