Hui Wei Chilli Ban Mian – Handmade Noodles With Fiery Chilli at Geylang Bahru

In Singapore context, you know a stall is good when a snaking queue forms right as it opens shop. Hui Wei Chilli Ban Mian is said to open at 1030, but it sometimes opens around 11(as it did on the day of my visit). But even so, the queue had already started forming at 1030 the morning I was there. The auntie said that because they had been very tired, they do open later sometimes.
As a Ban Mian lover, I like when stall owners make their dough and noodles from scratch. Hui Wei Chilli Ban Mian does just that, with a machine to speed up the process.
I had one of their popular dishes — Dry Mee Hoon Kueh ($4/$6). Hand torn and placed directly into the pot, no two pieces would ever be the same. Their homemade chilli is especially famous, and the auntie warned that it can be very spicy. True enough, the chilli packed a punch, but when combined with the fragrant soya sauce, it tasted divine. Dip the chewy Mee Hoon Kueh into the perfectly cooked egg yolk for a richer flavour. The dish was completed with a generous portion of minced meat, meatballs, fried ikan bilis, and shallots. This was a standout for me. If you are more of a seafood lover, there is a prawn alternative available!
To warm myself up in the cold weather that day, I opted for a piping hot bowl of Sliced Abalone Ban Mian ($4.50/$6.50). The noodle texture was similar to that of the Mee Hoon Kueh, and had a nice bite. Served with your usual suspects of minced meat, vegetables and egg, the bowl had abalone which added a nice chewy texture to the mix. My only gripe would be that the soup was on the saltier side.
The Mee Hoon Kueh is, dare I say, one of my favourites in Singapore. I would recommend ordering their dry noodles, just so you can try their famous chilli.
