Huay Kwang Wanton Mee – The Recipe Hails From Thailand

Patrick, 40, started this Huay Kwang Wanton Mee with his wife (who is from Thailand) more than 2 years ago. The recipe and (secret) concoction of the sauce are both created by his wife, so you can be sure there is a touch from the land of smiles in this wanton mee!
You know how Thai-style wanton mee always has this plain appearance but is actually very flavourful and lardy? Huay Kwang’s was no exception. Starting from $3.50, Huay Kwang’s Wanton Mee is coated with a familiar oil that is often used in Thai-style wanton mee. Add some crispy savoury lard and chilli flakes for extra shiokness!
The char siew was not as tough as I had expected, and it surprisingly provided some sweetness to the noodles. Sitting in a separate bowl of peppery soup, the smooth and plump wantons were adequately flavourful.
A must-order is Huay Kwang’s Fried Wantons ($3)! It’s actually a really simple snack, but it’s so satisfying when done right! Munching halfway into this, I felt that something was missing — an accompanying dip. I asked for mayonnaise but Patrick said there is no sauce to go with this even though they tried pairing it with mayonnaise initially. His rationale was that the fried wanton itself was savoury enough and adding mayonnaise will just make it too salty. A citrusy chilli sauce or sweet chilli sauce sounds perfect though!
Huay Kwang’s handmade Dumplings ($5) were huge and plump! They were always almost falling off the spoon due to their size and smoothness of their skin. The amount of ingredients in one dumpling exceeded my expectations. Look forward to well-marinated minced meat, crunchy water chestnut, and sweet firm prawns in each dumpling. These were easily the star of Huay Kwang’s menu.
To be honest, this isn’t the best Thai-style wanton mee in Singapore for me. But this is decent enough for me to yearn for it once in a while, especially so when our office is nearby. And I will totally be back for the dumplings!
