After Seetoh published an article on Makansutra about this particular stall in Chinatown, it has drawn lots of attention. I went for lunch with Uncle Smart one day and there was a long queue, all wanting to try Mr Tang’s food. I think one of the best thing about retirement is, still being able to do what you love. Boss/cook Mr Tang, still feisty at 81-year-old, has been a former head chef from Crystal Jade kitchens for the last 17 years. After his retirement, he started his own hawker stall in Chinatown Food Centre @ Smith Street selling some of his specialties.

His Wanton Noodles came with 4 pieces of wanton, with egg noodles cooked just right and remain springy until I inhale the last strand, perfected through years of experience (just that I didn’t quite like the alkaline water). I added some sambal which really feels Crystal Jade tastealike. Their beef brisket is stewed till the perfect tender soft texture. The handmade prawn dumplings in soup are excellent. They are plump and luscious pillows filled with juicy prawn, minced pork and black fungus. He also serves porridge which many has raved about. Looks like I must make a second visit soon to try it out!
