We all know how much Singaporeans love seafood, and Town Restaurant aims to dazzle with its ‘Seafood Symphony’, a brand-new buffet dinner served exclusively on Wednesdays and Thursdays. Expect a memorable evening filled with a generous array of seafood delights that will please any gourmand. From live stations and a slicing demonstration of whole New Zealand king salmon and yellowfin tuna (at 7pm), to an outdoor charcoal grill and do-it-yourself counters, this buffet experience truly has it all. Here’s how we did it. We kicked off our feast with the exquisite ‘Chef’s Special’, featuring sea urchin in shell with Nomad caviar, soft roasted cauliflower and ponzu wafu. This tasted superb, and since it’s rare to see such premium ingredients at a buffet dinner, our expectations for the rest of the meal were immediately heightened (spoiler: we were not disappointed). We moved on to our all-time favourite station — Seafood on Ice.

We love fresh, juicy and succulent seafood just as much as you do, and the selection at Town Restaurant is generous both in quality and variety. Expect Boston Lobster, Poached Fresh King Prawn, Baby Crawfish, Alaskan King Crab and more!

At 7pm, we marvelled at the chefs’ masterful carving of a whole king salmon and yellowfin tuna that weigh up to 30kg! What a spectacular treat this was! Naturally, we went straight for the freshest slices of sashimi before stuffing ourselves silly at the do-it-yourself Seafood Taco Station, which boasts premium Hokkaido Scallop in Peruvian Spices, and Hamachi in Southeast Asian Spices, complemented with a myriad of refreshing toppings such as Avocado, Crabmeat, Red Radish, Pickled Jalapeno Smoky Chilli Sauce, Nacho Cheese Sauce.

Fans of lobster rolls must not miss the live station where you can watch the chefs build you a Persimmon Boston Lobster roll! A treat to behold. After we had our fill of cold seafood, we moved on to the cooked repertoire, starting with Freshly Baked Whole Rock Salt Salmon, followed by Live Tiger Prawns cooked à la minute available in three flavours — Asian Chilli, Pineapple Tamarind, Herbal Broth. Those plump Tiger Prawns were absolutely delish!

Then, we headed to the al fresco section, where a chef was serving freshly barbecued seafood from the outdoor charcoal grill – think juicy Creole Butter Bamboo Lobster, tender Yakiniku Tare Fresh King Prawn and more, elevated with the robust, smoky flavours from charcoal.

Back inside, there are two do-it-yourself noodle stations — seafood noodle bowl and cha soba, both offering a nourishing and comforting note to your meal. Those who enjoy local flavours must make a stop at the seafood noodle bowl station, for its luxurious seafood toppings like Boston Lobster, Hokkaido Scallop, Alaskan Crab and Sea Prawn, completed with a choice of Laksa Gravy (must-try), Prawn Broth, and Clear Fishball Broth.

Next was the Asian section, where we heaped our plates with a satisfying selection of mud crabs and bamboo lobsters. Savour Mud Crab prepared in three ways (Black Pepper, Ginger Scallions, or Kam Heong) and Bamboo Lobster in two ways (Curry Leaf, Coconut Szechuan-spiced), alongside Crabmeat Fried Rice with Truffle Egg White & Baby Abalone, and more. Yum!

The Western section was impossible to resist with hearty dishes like Seafood Fricassée (a type of stew), Temasek Sea Bass in Bitter Orange Cream Sauce, Caribbean Coconut Mussels Curry, and Spicy Chorizo and Crustacean Jambalaya in Big Pan, looking exceptionally enticing. The best part? They tasted even better than they looked.

The Indian selection at Town Restaurant has always been outstanding, with a focus on seafood this time. We enjoyed the rich aromas and kick of spices from the Flower Crab in Dried Masala, Red Snapper Butter Masala, and Chettinad Prawn Curry. Pair these satisfying dishes with Saffron Pulao Rice, Garlic Butter Naan or Papadum!

This is a buffet experience worth taking the time to enjoy unhurriedly. The dazzling selection extends to charcuterie, cheeses with condiments (look out for the fresh honeycomb), artisanal bread, a wide array of smoked fish, Saffron Lobster Bisque, a Superfood Bar, and a live station serving Caesar Salad in Parmesan Wheel.

The feast culminates in a sweet grand finale. For a seafood-themed buffet, we were impressed to see such a formidable dessert line-up, ranging from beautiful artisanal cakes and tarts to Peranakan kueh.

Here, the creative chefs have a few more surprises up their sleeves; they have successfully extended the seafood theme all the way through to the dessert menu. Yes, you read that right! We were intrigued to see two new Inventive Desserts, assembled by the chefs à la minute, that brilliantly pair well-loved desserts with savoury seafood elements.

Imagine liquid nitrogen ice cream crafted before your eyes, then topped with caramel, salted walnut and… fish floss? Or how about chocolate salted egg yolk lava cake, served with chocolate sorbet and crowned with crispy fish skin? As unusual and adventurous as these may sound, we tried both creations and can confirm that the flavours and textures worked amazingly well together. Definitely worth saving room for!
