Dim Sum High Tea at Cassia, Capella Singapore

Dining trends have changed as we are more willing to travel to find good food these days. Josh has been raving so much about the dim sum at Cassia, so I gave him a belated birthday treat there.

Located at the luxurious Capella Singapore in Sentosa, Cassia is a high-end fine dining Chinese restaurant. After climbing a flight of dimly-lit stairs to reach the restaurant, I was impressed by its elegant interior. And what’s the best thing? It is not as crowded and we can really enjoy our dim sum while having long conversation!

If you leave the restaurant without trying their Steamed Barbecued US Kurobuta Pork Bun with Black Truffle (黑松露蚝皇克猪叉烧包), it means you haven’t truly been to Cassia. I am totally not a fan of bun, be it the usual char siew bun or pork bun or red bean paste bao. But THIS IS THE BEST PORK BUN I HAVE EATEN.

The chef was able to infuse the Western ingredient truffle intelligently into the common pork bun to make it an outstanding dish. The US Kurobuta Pork were aromatic, well-marinated and cooked till they absorbed the sweet and salty seasonings. It was so yummy that I ate it immediately and have totally forgotten to take the inside of the bun. And Josh is such a big fan of this pork bun that he requested to change some of his dim sum items for this bun. If my memory didn’t fail me, I think he had THREE buns that day.

The Steamed Siew Mai topped with Abalone (鲍鱼仔烧卖) is certainly not your ordinary siew mai. It came with a small abalone sitting on top of the siew mai. The pork and prawn filling was substantial, while each bite of the dumpling was sensational. We also had Steamed Vegetarian Dumplings with Spicy Sauce (淮山百合水晶饺) which was nothing to shout about.

Of the three dumplings served, the Steamed Vegetables Dumpling with Black Fungus and Mushrooms (水云苋菜饺) scored top, followed by Steamed Lobster Dumpling with Gold Flake (金箔龙虾饺) and then Steamed Seafood Dumplings with Golden Pumpkin Sauce (翠绿海鲜饺).

Love the steamed vegetable dumpling which has crunchy fungus and mushrooms which balanced the overall taste. And the lobster dumpling was definitely an indulgent treat with juicy lobster meat wrapped in a translucent skin.

Not forgetting the Baked Black Pepper Beef Pastry (黑椒牛粒酥) which has buttery crust filled with flavourful and juicy chopped beef, a more high class version of the usual char siew pastry. There’s also Deep-fried Vietnamese Rice Roll with Chilean Sea Bass, Celery, Bacon and Seaweed (蝉衣脆鱼卷) and Deep-fried Beancurd Roll with Goose Liver (鹅肝付皮卷). We could taste the goose liver in the beancurd rolls. In addition, the beancurd skin was fried to a perfect crisp.

To round off our meal, we had Trilogy Dessert which consists of Steamed Custard Buns with Creamy Salted Egg Yolk (香滑流沙包), Homemade Cream of Avocado (牛油果汁) and Crispy Water Chestnuts Strip (香脆马蹄条). The steamed custard bun is good. It is served piping hot and the runny creamy salted egg yolk oozed out when we sank our teeth into the bun. The creamy salted egg yolk had a tinge of saltiness and sweetness in it, which combined well to delight the palate.

The dim sum dishes and services didn’t disappoint. Each dim sum is so delicate and going through the entire high tea is like watching a theatre performance – with surprises along the way. Each dim sum is presented elegantly and so refined; and the service is good. They also have a good selection of teas to choose from: Flower Tea (花茶), Chrysanthemum (狮峰菊花), Green Tea (绿茶), XiHu Dragon Well (西湖龙井), Jasmine Winter Flakes (茉莉飘雪), Pu’er Tea (普洱茶) and Vintage Pu’er (陈年普洱).

Available on Saturdays, Sundays and Public Holidays, Cassia’s “EAST MEETS WEST AFTERNOON TEA” offers traditional Western afternoon tea set and Dim Sum Afternoon Tea menu from 3pm to 5pm. Each set costs $39.90++ per person. Next time, I will be back to try their dim sum brunch menu which offers over 60 types of dim sum, appetisers and barbecue specialities.
