Long gone are the days where chee cheong fun is just your average side dish at a dim sum place. This deceptively simple dish allows the quality of the ingredients to really shine, especially when all you have to judge are rice rolls, sauce and your choice of one key ingredient.

Many places have even taken the leap to jazz up their chee cheong fun with unconventional ingredients (and succeeded!). With 2021 giving birth to a handful of new stalls, we bring to you a mix of some of the best chee cheong fun places in town, old and new.

Chef Leung’s Authentic Hand-Milled Rice Noodle Rolls

cheecheongfun-08

A fairly new face to join the chee cheong fun scene in mid-2021, Chef Leung’s Authentic Hand-Milled Rice Noodle Rolls is run by Hong Kong-born Leung Tze Cham and his family. Having spent almost 30 years training as a dim sum chef at Raffles Hotel, Chef Leung now spends his days dishing out fresh, silky rolls of chee cheong fun made with house-milled rice flour batter. The Original ($2.80) is definitely one to remember. The rice sheets are doused in their house-made peanut and sesame sauce, and sprinkled with toasted white sesame seeds and spring onions for a flavour boost. Other equally good options to try are Char Siew ($4), Prawn ($4.50) and Tuna ($4.50).

Cheong Fan Paradise

cheongfanparadise-09

Cheong Fan Paradise, which saw waiting times as long as three hours when they first opened, is helmed by Kerene Cheng, a former dim sum chef at Shangri-La’s Shang Palace. The Prawn Chee Cheong Fun ($4) features freshly-made silky-smooth rice roll sheets that are stuffed with fresh, meaty prawns, and topped with fried shallots. The rice rolls beautifully soaked up the savoury sauce and was paired with a housemade belachan chilli that gave it a delightful sweet-spicy kick. The Cai Pu Chee Cheong Fun ($3) is not to be missed out on either. The firm factory-made rolls paired well with the chye poh (preserved radish). The sweet, dark sauce was mixed with chilli oil, making this dish a fantastic harmony of savoury, sweet and spicy notes.

Da Chang Jin Handmade Chee Cheong Fun

cheecheongfun-10

Expect some fun fillings that are out of the norm at Da Chang Jin Handmade Chee Cheong Fun which is located in Holland Drive Market and Food Centre. Their freshly-made Hong Kong-style chee cheong fun comes topped with chye poh (preserved radish) to give it an additional salty kick. While they serve the usual flavours such as Mushroom ($3), Char Siew ($3.50) and Prawn ($4), they also churn out Smoked Salmon ($5) and Liver Sausage ($6)! The Smoked Salmon comes with tobiko for extra bursts of umami. After having gone through some heat while the rice roll sheets were being cooked, the salmon was fairly cooked through but still retained that delightful smoky flavour..

Duo Ji Chee Cheong Fun

cheecheongfun-13

For good ol’ Singapore-style chee cheong fun, visit Duo Ji Chee Cheong Fun which has been dishing out this old-school variation since the 1970s. The stall opens at 7am and wraps up once their stock is out, which can sometimes be as early as 9.30am. Despite the queues, the aunties prepping the chee cheong fun are very efficient so you’ll get your order in no time at all. The rice rolls are sourced from a supplier so while they aren’t silky smooth, they’re plenty springy and soft. The mix of fragrant oil, lightly toasted sesame seeds, black sweet sauce and chilli creates a pleasantly smoky and sweet-spicy flavour profile that complements the rice rolls well.

Freshly Made Chee Cheong Fun

cheecheongfun-14

Old Airport Road Food Centre is home to a number of great stalls and Freshly Made Chee Cheong is undoubtedly one of them. Not only will you find your usual favourite flavours of Mushroom ($2.50), BBQ Pork ($2.50) and Prawn ($2.50) here, you will also be greeted with a few unconventional choices such as Turnip ($2.50), Egg ($2.50), Century Egg ($3.50) and Otah ($3.50). When it comes down to it, you can’t go wrong with Scallops ($3.50) and Freshly Made Chee Cheong Fun doesn’t disappoint. Albeit small in size, these fresh morsels were soft and juicy, pairing excellently with the silky smooth rice roll sheets and savoury-sweet sauce. The addition of fried shallots was the aromatic cherry on top that tied the whole dish together.

Pin Wei Hong Kong Style Chee Cheong Fun

cheecheongfun-12

Once a pushcart chwee kueh stall in the 1950s, Pin Wei Hong Kong Style Chee Cheong Fun is now touted as one of the best chee cheong fun stalls in Singapore. All their rice rolls are made-to-order and attract long lines but don’t be deterred by them as the ladies manning the stall are quite the fast workers. The rice roll sheets are practically gossamer-thin and silky smooth, allowing them to thoroughly soak up the savoury sweet sauce mix that is then balanced out by the spicy punch from the sambal chilli. My personal favourites are hands-down the Char Siew ($4) that comes peppered with generous bits of pork, and the Scallop ($6) which features morsels of sweet and juicy scallop flesh.

Rice & Roll

riceandroll-08

Opened by a pair of gymnastic coaches-turned-chee cheong fun experts, Rice & Roll takes pride in churning out platters of chee cheong fun where everything is made from scratch — from the batter right down to their secret sauce. Make sure you prepare empty stomachs before you arrive as even their no-frills Original ($2.50) is enough to fill you up. One portion of their chee cheong fun measures up to 50cm before getting cut into 16 pieces. The silky thin sheets really soaked up the light, savoury sauce that will have you completely addicted. They also do quite a few interesting filling combinations such as Meat Trio ($5) that comes packed with char siew, Chinese and Taiwan Sausage, and Eggs Trio ($4) comprising century egg, salted egg and regular egg.

Teck Hin Delicacies

cheecheongfun-09

Some might remember Teck Hin Delicacies for their piping hot bowls of congee but even after making the pivot to selling solely chee cheong fun, this stall in Ghim Moh Market & Food Centre still sees snaking queues from as early as 6.30am! Fret not, as their lines actually move pretty fast. Their Delicious Chee Cheong Fun ($2.50/3) features firm rice rolls served with a heady mix of sesame oil, soya sauce and sweet sauce, and a dollop of hae bee hiam that exudes a spicy fragrance. Props to Teck Hin Delicacies for their flawless execution of a seemingly simple dish!

Xiang Gang Xin Kou Wei

cheecheongfun-11

Helmed by a former dim sum chef hailing from Hong Kong, Xiang Gang Xin Kou Wei is tucked away in Aljunied Market and Food Centre, and has a number of chee cheong fun variations on the menu that are unconventional. Expect Slice Fish Chee Cheong Fun ($2.50), Shredded Chicken Chee Cheong Fun ($2.50) and even XO Durian Chee Cheong Fun ($2.50). For me, sticking to Fresh Prawn Chee Cheong Fun ($2.50) is pretty standard. The freshly-made rice rolls, which were on the chewy side, were doused in a delightful savoury sauce and accompanied with a side of fragrant hae bee hiam. There might be a bit of a wait as the chef works solo, but patience is a virtue that will be well-rewarded at Xiang Gang Xin Kou Wei.
