Boon Tong Kee Kway Chap: Very Good Kway Chap

Don’t be mistaken. Although they have the same name as the famous Boon Tong Kee Chicken Rice, this stall doesn’t sell chicken rice at all. Instead, they are famous for their duck rice and kway chap! While I was queuing for the kway chap at 5.30pm, I overheard a lady complaining to the lady boss about the long queue at her stall, so she has to be here early in order to beat the dinner crowd.
Everyone who has tried this stall will remember the pretty lady boss, Madam Yang. She may be successful now but all these didn’t come easy. Her ex-husband used to abuse her and she hit the headlines in our tabloid newspapers because the husband slashed her very badly, with many cuts in her body. After the divorce, she picked herself up and opened this stall in Zion Road Hawker Centre.
What makes Boon Tong Kee Kway Chap unique is its soup. Alot of hardwork goes into brewing a good bowl of soup. Firstly, the herbs and duck bones are added and simmered for about 2 hours. This serves as a base.
Tofu, intestines, meat, eggs, pork belly and other kway chap ingredients are added into the base. To make the “lor” that is poured onto the ingredients, corn starch is added to the base to give it a thick and sticky texture.
It doesn’t mean that when you add more herbs, it will definitely be better. It all depends on the proportion of the herbs added. If too much is added, it will turn bitter. Likewise, if it is too little, it may just taste bland.
For Boon Tong Kee Kway Chap, I think their have the right amount of herbal taste to their sauces. This is just one person portion, very generous, isn’t it? When the thick gravy is poured over the duck meat, beancurd and some other other ingredients, they just glow naturally and it is full of flavour.
